I served the waffles with my family's Vanilla Waffle Sauce[2]. (Waffle Sauce is our favorite topping for almost every sweet breakfast!) These waffles were a great way to welcome our first cool and rainy day this fall and I'm sure they'll be on our table for dinner in the near future.
Pumpkin Spice Waffles ~ Gluten Free or Not
Yield: 8-10 waffles, depending on size

1 1/2 cups brown rice flour *
2/3 cup tapioca starch *
1/3 cup potato starch *
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon kosher salt
1 tablespoon pumpkin pie spice mix[4]
1/4 cup light brown sugar
1 cup pumpkin puree
1 1/2 cups buttermilk, or this buttermilk substitute[5]
3 eggs
1/4 cup butter, melted
* If you are not in need of a gluten free recipe, you can substitute 2 1/2 cups all purpose flour for the items marked with an *
Preheat your waffle iron. Whisk together the pumpkin, eggs and the buttermilk until smooth. Add the dry ingredients to the wet and stir until smooth. Stir in the melted butter. Pour batter onto the hot waffle iron and cook until crisp and browned. Serve with the toppings of your choice. Enjoy!
